All the Flavor. Less of the Caffeine.

Who says great coffee needs caffeine to be enjoyable?

At Ocana Coffee Company, we believe everyone deserves a delicious cup of coffee, whether they're starting their morning, winding down after dinner, or simply choosing to reduce their caffeine intake.

And thanks to modern decaffeination methods, you don't have to sacrifice great flavor to enjoy decaf.

How Is Caffeine Removed From Coffee?

Decaffeination takes place before coffee beans are roasted, while they're still green.

The goal is to remove most of the naturally occurring caffeine while preserving as much of the coffee's original character, aroma, and flavor as possible.

Several methods are used throughout the coffee industry, including water-based processes and methods that use carbon dioxide or approved solvents.

At Ocana Coffee Company, our decaffeinated coffee beans undergo the Swiss Water Process, a water-based method that removes caffeine without using chemical solvents such as methylene chloride or ethyl acetate.

What Is the Swiss Water Process?

The Swiss Water Process is a carefully controlled decaffeination method that uses water, coffee-soluble compounds, carbon filtration, and time to remove caffeine from green coffee beans.

Here's how it works.

Step 1: Preparing the Green Coffee Beans

Unroasted coffee beans are introduced into a controlled water-based process that prepares them for caffeine removal.

Step 2: Using Green Coffee Extract

The process uses a specialized solution called Green Coffee Extract, which contains soluble coffee components but has had its caffeine removed.

This helps create conditions that encourage caffeine to move out of the beans while limiting the loss of other soluble coffee compounds.

Step 3: Removing the Caffeine

As caffeine moves from the beans into the surrounding solution, carbon filters remove the caffeine from the liquid.

The process continues under carefully controlled conditions until the required decaffeination level is achieved.

Step 4: Drying the Coffee

After decaffeination, the beans are dried to the appropriate moisture level before being prepared for roasting.

The result is green coffee that retains much of its original character while having the vast majority of its caffeine removed.

Does Decaf Coffee Still Contain Caffeine?

Yes. Decaffeinated coffee is not necessarily completely caffeine-free.

Although the Swiss Water Process is designed to remove 99.9% of caffeine from green coffee, the finished beverage may still contain a small amount.

The exact amount in your cup depends on the coffee, serving size, and brewing method.

For most coffee lovers looking to significantly reduce their caffeine intake, decaf provides a way to enjoy coffee with substantially less caffeine than regular coffee.

Does Decaf Coffee Taste Different?

Decaffeination can influence coffee's flavor, but that doesn't mean decaf has to taste bland or weak.

Bean quality, processing, roasting, and brewing all contribute to the finished cup.

A well-prepared decaf coffee can still offer the rich chocolate, caramel, nutty, and other flavor characteristics that make coffee enjoyable.

At Ocana, we approach decaf with the same passion for flavor that inspired three friends to begin roasting coffee in a garage.

Because great-tasting coffee matters, with or without caffeine.
